MRS. D'S POTATO SALAD:
6 or 7 med. potatoes chopped onion - to taste 6 hard boiled eggs 1/4 cup oil 1/8 cup vinegar 1 Tablespoon sugar 1 tsp. prepared mustard 1/2 tsp. celery seed salt & pepper to taste Miracle Whip or any commercial salad dressing
Boil the potatoes with their jackets on. While they are cooking, mix up the marinade. When the potatoes are done, drain and empty on to a sheet pan. Use a fork to hold the hot potato and peel. After all are peeled, they should be cool enough to cube. Add the onion and marinade. The secret to this potato salad is to get the marinade on the potatoes as soon as possible, while they are still hot, to absorb the marinade flavors. Refrigerate over night or at least several hours. The next morning, add the boiled eggs and Miracle Whip.
When I make big batches, I use 5 lb. of potatoes and a dozen eggs and I triple the marinade ingredients. This makes about an ice cream pail. I know many use red potatoes for PS, but I like to use russets.
