Rhubarb Custard Cake
l yellow cake mix - made as per package directions and poured into a 9x13 pan. Sprinkle about 3 cups chopped rhubarb over batter. Sprinkle about a cup of sugar over that. Pour 1-2 cups whipping cream over all.
Bake at 350 until the cake is starting to brown. You can test with toothpick or press finger lightly.
This is a very forgiving receipe. You can also use white cake mix, more or less rhubarb and sugar and I have used half and half or even evp. milk. Of course, the whipping cream is the best. When done, the rhubarb will be on the bottom and the cake on top. Invert on the plate.. I like this well chilled..
