2 cucumbers, chopped 1 green pepper, chopped 2 stalks of celery, chopped l onion, chopped 3 tomatoes, cut up and diced 1 can green beans OR 1 jar stuffed olives, sliced 1 box frozen peas 1 1/2 cup sugar 1/2 cup vinegar 1/2 cup oil
I sliced the peeled cucumbers in quarters and remove most of the seeds, then slice lengthwise in half or quarters again. Soak the cucumbers, peppers, celery, and onion in salt water for 3 hours. Drain well and add tomatoes, beans or olives, and peas. Boil sugar, vinegar, and oil for 2 min. Watch closely, as it will get hard if over cooked. Cool and pour vegetables. Marinate for 24 hours. I like the contrast of the salty olives and the sweeter dressing.

Sounds good. I would like the olives but others are too snoopy. Peas will be a challenge but I'm putting them in. I think I'll make this and take to the next track meet.
