2 lbs. boneless chicken breast or thighs 1 cup pineapple juice 1/2 cup brown sugar 1/3 cup soy sauce
Place chicken in slow cooker.
Combine pineapple juice, brown sugar and soy sauce. Pour over chicken and cook on low six hours or until tender enough to shred.
When it's finished cooking, shred and serve over rice.
My notes: I had green and red peppers that needed to be used, so I sliced those thinly and put them on top of the chicken before covering with the sauce mixture. I also chopped up green onions and sprinkled over our servings. I had 2.13 lbs. of chicken breast so I made 1-1/2 times the sauce mixture and I am glad I did. We have had two hearty meals off of it and still have enough left for at least one more generous serving.
