PUMPKIN STREUSEL CAKE:
STREUSEL: 1 cup packed brown sugar 2 tsp. cinnamon 1/3 cup butter-softened 1 cup chopped nuts - if desired
CAKE:1 yellow cake mi 1 15/16 oz. can of solid packed pumpkin 3 eggs1/4 cup butter - softened
Combine sugar and cinnamon in a small bowl and cut in butter wit pastry blender - stir in nuts if desired and set aside while making cake. Combine cake mix, pumpkin, eggs, and butter. Beat at medium speed for 2 min. Spread half in 9x13 in. pan and sprinkle half of the streusel over batter. Spread with remaining batter and cover with the rest of the streusel. Bake at 350 for 40-50 minutes or until a toothpick inserted in center comes out clean. I usually make this in a bundt pan, well greased, putting some of the streusel, then half the batter and the rest of the streusel and the rest of the batter. THIS IS SO GOOD!
