2 Tablespoons plus 1 teaspoon yeast 3 cups milk 1/2 cup (1 stick) butter, melted 1/4 cup olive oil 2/3 cup honey 2 teaspoons salt 1-1/2 cups whole wheat flour Enough all-purpose flour to make dough kneading consistency--about 8 cups) Additional melted butter for top of baked loaves
Warm milk, but do not boil. Cool slightly (I usually stick my finger in and if it is not scalding to the touch, you are good to go). Dissolve yeast in warm milk. Let rest until it bubbles showing it has activated.
Add the melted butter (that is not too hot), olive oil, whole wheat flour, honey and salt. Stir until fairly smooth.
Add enough all-purpose flour to form a soft dough and knead until smooth and elastic.
Place in a greased bowl and turn to grease top. Let rise until doubled.
Punch dough down and shape into three loaves and place in greased loaf pans. Let rise again until approximately doubled in size.
Bake in 350 degree oven for approximately 30 minutes or until golden brown and loaves sound hollow when tapped.
Brush tops with melted butter and let cool in pans for approximately 10 minutes before turning out onto a cooling rack to cool completely.
This bread freezes quite well--if there is any left to freeze!
