1/2 cup sugar 1/4 cup flour 1/4 teaspoon salt 1 package Knox gelatin 1-1/2 cups milk 1-1/2 cups Cool Whip 3 egg whites 1/4 teaspoon cream of tartar 1/2 cup sugar 3/4 cup coconut 3/4 teaspoon vanilla 1/4 teaspoon almond flavoring
Combine 1/2 cup sugar, flour, salt and gelatin in saucepan or skillet. Gradually stir in milk and cook over low or medium heat, stirring constantly, until mixture becomes very thick. Cool. Beat until smooth; fold in flavorings and Cool Whip; set aside.
Beat egg whites with cream of tartar until soft peaks are formed. Gradually add 1/2 cup sugar and beat until stiff. Fold into gelatin mixture; add 1/2 of coconut and pour into baked pie shell. Sprinkle remaining coconut on top. Chill at least two hours before serving.
