Rhubarb Upside Down cake:
4 cups chopped rhubarb
1 yellow cake mix - and ingredients it calls for
2 cups sugar
3/4 cup water
3 or 4 drops of red food coloring.
Spread rhubarb in greased or sprayed 9 x 13 pan. Make cake mix and pour over the rhubarb. Put the sugar and water and food coloring in a saucepan and heat to boiling and then carefully pour over the cake mix.
Bake a 350 for one hour.
