Rhubarb Dream Bars:
Crust: 2 c flour 3/4 c. powdered sugar 1 cup soft butter Mix and press in to 10-15 in. pan. Bake at 350 for 15 min. Crust will be light colored.
Filling: 4 eggs 2 c. sugar 1/2 c. flour 1/2 tsp. salt 4 c. diced rhubarb - cut fine
Combne eggs and dry ingredients. Mix well and fold in rhubarb.. Spread on hot crust. Bake 45-55 min. in 350 oven. If you use frozen rhubarb, rinse in warm water to remove ice crystals and drain well.
Don't pat the crust to hard, or it will be hard to cut and remove from pan.
