PEANUT BUTTER BLONDIES
¾ cup (1-1/2 sticks) butter, softened ½ cup peanut butter 1 cup sugar ½ cup packed brown sugar 2 eggs 2 teaspoons vanilla 2 cups flour 1 teaspoon salt 1 teaspoon baking soda 30-40 Reese’s miniature peanut butter cups, unwrapped 1 cup chocolate chips, melted ½ cup peanut butter, melted
Preheat oven to 350 degrees. Grease a 9x13 pan with cooking spray.
In a large bowl, beat butter, peanut butter, and sugars until fluffy. Add eggs and vanilla and beat until combined.
In a separate bowl, whisk together flour, salt and baking soda. Add to wet ingredients and beat until just combined. Transfer batter to prepared pan.
Press peanut butter cups into batter, creating even rows. Bake for 25-30 minutes or until just set.
Recipe said to let cool and drizzle with melted chocolate chips and peanut butter before serving, but I spread both over the bars while they were still warm and then let everything cool before cutting into squares.
