1 8 oz. cream cheese - softened 1/2 cup grated carrots 1/4 cup confectioner's sugar 1/4 cup chopped pecans
Use as a spread on quick breads or a cinnamon raisin bread

Sounds very good Jane. I would probably put some cinnamon in it. Love me some cinnamon.

Thank you, Jane--you are right, this would be delicious on some bread. Haven't tried my carrot raisin bread yet, but I'm thinking toast a big slice and then slather it with this--YUM!

Yep, I think I need to make this as well. But I'll cut the recipe in half, Mark won't eat spreads other than jam or jelly.
